• Chop the onion into thins slice

• Peel and slice the garlic

• Cut the tomatoes roughly

• Fry the onions, and garlic until brown

• Disolve the stock and bring to the boil

• Add the tomatoes and oregano, stir for 10 minutes

• Add the fried onions, tomatoes sautee to the stock

Leave on the stove for 3 hours

• Turn down the heat and add the eggs to poach

• Prepare the serving plates, and serve

1.5kg tomatoes, ripe and red

1 litre chicken or vegetable stock, or water

4 eggs
